Chef Alex grew up in Michigan, left for formal kitchens, and came back. The season here is short and particular. He cooks accordingly. What arrives at the table reflects what the land is doing right now, not what the menu promised three months ago.
There are no shortcuts at Bohemia. Not in sourcing, not in preparation, not in the time it takes to do something correctly. Guests sense this. They may not name it. But they feel the difference.
